An apple cider vinegar developed by a Jubbal-based enterprise ‘Hilly Foods’, using a production technology standardised by Dr YS Parmar University of Horticulture and Forestry, Nauni, will soon hit the market.
· The product was recently launched by Vice-Chancellor Parvinder Kaushal on the campus. BS Rawat, entrepreneur and proprietor of Hilly Foods, ventured into vinegar manufacturing after he incurred post-harvest losses in his apple crop.
· The technology was developed by Rakesh Sharma and VK Joshi, present and former scientists at the Department of Food Science and Technology, and was transferred to Hilly Foods.
· The production of apple cider vinegar using this technology enables complete utilisation of culled apples.
This technology overcomes the problems of traditional methods, like slow results and poor-quality vinegar.
